Visitors to the Lexington-Springmill area north of US30 are seeing new buildings rising, even in the midst of snow and ice.

This past week, structural elements of the new IHOP restaurant were appearing at 2190 Walker Lake Road. The restaurant will be located to the west of the second entrance to the Meijer-anchored shopping area, roughly across the street from Starbucks.

IHOP, the initials for which originally stood for “International House of Pancakes,” is a “breakfast-focused” eatery with over 1,600 locations in the United States, Latin America, the Middle East, Southeast Asia, Canada, and elsewhere. Currently, the nearest IHOP locations to Mansfield are in Westerville to the south, and Elyria to the north.

Like most of its restaurants, the local IHOP will be open 24 hours a day. It is slated to employ 30 people.
