From food truck to stand-alone restaurant to a chain – Panchos Tacos clearly has a winning recipe.

The local favorite began in 2016 when two friends, Alejandro Anchondo and Jesus Davalos, began to sell from a new taco truck. By 2017, the pair had opened a new restaurant at 1344 Lexington Avenue in Mansfield.

Concentrating on a casual atmosphere and the freshest ingredients possible, Panchos Tacos offers authentic Mexican and American Mexican foods, with a specialty of Al Pastor offerings.

Al Pastor is a traditional Mexican dish made with seasoned and marinated pork. The name translates to “Shepherd Style,” which is derived from the origin of the cooking method.

The doors will open soon on the second Panchos Tacos restaurant, this one behind McDonalds at the corner of State Route 97 and Interstate 71 in Bellville. The Lexington Avenue location will remain open, according to the restaurant’s Facebook page.
